No you don’t need to dry rice out in your refrigerator overnight to have perfectly crispy rice. Everything can be day of, in fact, night of, perhaps 30 minutes if you’re hustling. Pretend Jeremy Allen White is speaking in hush tones pushing you to get the dish to the table. Whatever the case, you too can make a quick pork sausage, crispy rice, a tart dressing and serve it up under an hour.
Theres a deliberate sour funk to this crispy rice dish. Fish sauce is the backbone here, it makes the pork taste meatier and the vinaigrette borderline drinkable. Not all crispy rice dishes are born the same. This is a lazy girls version of crispy rice. I truly could not be bothered to stock up my pantry with miscellaneous ingredients to recreate an exact Thai, Vietnamese or Laotian dish. To be fair, I know this is reminiscent of some dish with a name I can’t remember. I don’t want to recreate history, I am not attempting to appropriate anyones culture. I want something delicious, something familiar and I want it now. So here it is.
